Fukasaku is devoted to authentic BC products and committed to sustainability, locality, and healthy eating! All seafood is caught right here in the Pacific Ocean and we are the oldest sushi restaurant in the nation to be 100% certified by Vancouver Aquarium’s Ocean Wise program. We have a great selection of BC VQA wines, beer, and even BC sake.
We believe local food has more nutritional value, contributes to the local economy, and has the least impact to the environment (CO2 consumption etc). We also love the clear traceability of the product: it is easier to identify who harvested the vegetable or who caught the seafood with what method and what location.
We are a big fan of BC seafood: it has lots of variety and really good flavour and quality. At first, we wanted to see if we could start a sushi business with only local seafood. The answer was yes. Secondly, we wanted to see if it was doable with sustainably caught local seafood. The answer was yes. Thirdly, we wanted to see if anyone else was practicing this: the answer was no.
We wanted to set a example of what you can do with local sustainable seafood caught within the province. When you have access to the seafood you are so proud of, and seafood you respect, why not focus on that rather than relying on imported or out of province product?
