Executive Chef Neil Antolin and his culinary team find inspiration in local, sustainable, fresh ingredients readily abundant along the Pacific Coast. Our mild climate, provides many a delicacy from our wild and not so wild spaces.
We feature a variety of local ingredients in our menus, such as Savoury BC Clam Chowder, Hoyne Dark Matter Braised Beef Short Ribs, the Pacific Seafood Tasting Platter, Blackened Wild BC Salmon + Tiger Prawns and Lemon and Honey Glazed Local Cowichan Bay Chicken Supreme.
